Kaiseki
Kaiseki is the meal served at the beginning of the ceremony, intended to only slightly fulfill hunger.

Kaiseki, similar to all other components of the ceremony, must be artistically displayed and served. The host expends utmost thought to choose ingredients and utensils, and prepare the meal. The guest is expected to realize the host's effort and admire everything about the menu.

- white rice
- miso soup
- nimono (food cooked in broth)
- yakimono (broiled fish, vegetables, etc)
- hashiarai/kosuimono (broth)
- hassun (tray with one delicacy from land and one from sea)
- pickles
- brown rice with hot water
