Matcha is the green tea powder most commonly used at the ceremonies. It is unique with a higher concentration of caffeine than other green teas. As opposed to being grown in the full Japan sun, Matcha leaves are shaded for weeks before harvest, in order to have maximum chlorophyll for a more vivid green. Leaves are hand-picked, steamed, dried, and ground. Matcha is also much healthier than other green teas because the leaf is consumed as a powder, which provides all of the antioxidants of the plant.

Tea is served twice at a full ceremony; thick first, then thin. It is up to the host to decide which teas to use. Two servings of Matcha would be most preferred, and most common, but the other options include Genmaicha, Kukicha, and Hojicha.
